Cold Pressed Olive Oil is not heated over a certain temperature (usually around 80 Degrees Fahrenheit) therefore, the oil does not lose any of the nutrients that can be lost when heated.

Today in Israel there are strict regulations with regards to the standard of Olive Oil.  The Israeli Council for Olive Oil have a special Quality Seal which is awarded only to Olive Oils that have passed the quality and production tests and evaluations.
